week 8: the budget update

I think I just need to explain how much food we’re getting from our CSAs. This week  between the two baskets, I’d say we carried home about 20 pounds of fresh produce. There’s still a lot of it in the fridge, which we’re working on preserving–blanching & freezing things for January & February, when there’s no CSA.

There are two more weeks of CSA double-duty. To be honest, I like the challenge. This week was still kind of a dud, since neither of us were in the apartment much & meals had to be done quickly. It was fun to have a friend over to make dinner for us. The tradition began when we were living in France together–Thursday night dinners, alternating apartments. Now that she’s in Bloomington (where she grew up, which was an incredibly odd coincidence) we’re picking up the tradition again, taking turns making dinner. This week, she knocked out bimbimbap to celebrate her coming move to Korea. De. licious.

Breakfast: massive apples or toast with butter or yogurt & granola or pumpkin cinnamon rolls (Yeah, that happened. And it was awesome.)

Meals:
Sun. dinner: homemade pizza
Mon. lunch: sweet potato & mustard greens soup
Mon. dinner:
homemade bean burgers & zucchini fries
Tues. lunch:
homemade bean burgers & zucchini fries
Tues. dinner:
bibimbap
Wed. lunch: left over bibimbap for me; soup for Joe
Wed. dinner: pizza
Thurs. lunch: Brussels sprouts & blue cheese with garlicy Swiss chard & toast
Thurs. dinner:  autumn veggie omelet
Friday lunch: vegetable stir fry with winter greens
Friday dinner: stuffed, roasted squash with sautéed green beans & salad

Snacks:
chips & homemade salsa, almonds, apples, granola bars

WASTE

  • container of pasta I forgot about at work for a week
  • the remains of 2 dinners eaten after 9 p.m. that were then found on the stove the next morning
  • box & plastic lids from pizza & soda (I know, I know. Gross. But it’s a hell of a week.)
  • lots of compost
